  • 1 pound white fish fillets (cod, tilapia, or other white fish)
  • 2 tablespoons vegetable oil
  • 1 shallot, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 2 tablespoons red curry paste
  • 2 tablespoons fresh lime juice
  • 2 tablespoons coconut milk
  • 1 teaspoon sugar
  • 1 teaspoon tamarind paste
  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • ½ teaspoon ground coriander
  • 4 kaffir lime leaves, finely chopped
  • ½ cup fresh cilantro leaves, chopped
  • 2 tablespoons toasted shredded coconut
